I discovered that blocks can use the "item/generated" model that most items use to extrude 2D textures into 3D models and found that it works pretty well when it replaces the "block/cross" model. It makes all the flowers and grass and related models be flatter... but also thicker? Anyway this is just a proof of concept, there are some exceptions that I don't know how to convert to this style:

Chains use two different textures so I'd have to make a custom 3D model for it to work.

Firefly bushes and open eyeblossoms have emissive parts so I'd also have to make a custom model for those.

Blocks that have a cross as part of them have not been changed, such as campfires and azalea bushes.

Everything else should be covered, and made more voxelized.
