Right-clicking mobs will give you a bucket with that mob. Crouch to restore normal behavior.

NBT is saved when an entity is picked up and restored when placed. With commands, entity NBT can be placed into the EntityData tag.

In Creative Mode, picking up mobs will delete them and placing works the same as with spawn eggs.
