Wish you could craft it in Vanilla?

Now you can! In a scientific way.
Craft gunpowder from 3 ingredients: 6 parts nitrogen-high fertilizer (Bone Meal), 2 parts stabilized carbon source (Charcoal) and 1 part Sulfur.

Sulfur is a new item. You can get it by smelting Magma or Glowstone blocks in a Blast Furnace.

This mod is designed to work on Fabric servers without its players downloading anything.
